Strawberry Pie
- 1, 9in baked pie shell
- 4 cups fresh strawberries
- ¾ cups sugar
- 3 tbsp cornstarch
- ¾ cups water
- Whipped cream (Optional)
- Arrange half of strawberries in pie shell.
- Mash remaining berries and mix with sugar in medium saucepan. Place saucepan over medium heat and bring to boil – stirring frequently.
- In a small bowl whisk together cornstarch and water.
- Gradually stir in cornstarch mixture into boiling strawberry mixture. Reduce heat and simmer mixture. until thickened - about 10 minutes, stirring constantly.
- Pour mixture over berries in pastry shell. Chill for several hours before serving.
- If desired, whip cream and serve each slice with a dollop.
Local Substitutions: If you have access to local milk and cream, you can use that to whip and serve with this dessert. Strawberries grow well in Vanderhoof. If you plan on making this recipe out of the growing season, consider substituting the fresh strawberries for your garden grown frozen strawberries.
